Simple (Low Added Sugar) Breakfast Pancakes

We love a good pan cake!  But they are not always the best start to a day if you want to relax for a while.  The simple carbs & traditional toppings can make for a high energy kick you just don't want on a Sunday morning!

If you are about to go out running, the regular pancake can be perfect. Simple carbs that your body will break down fast, ready to use! Especially when you top them with jam, syrup &/ or fruit. With out this as a sure thing, I like to add some good stuff that will help with a slower carb release & keep the calm in the household (at least until mid morning)...

Basic & pantry friendly are also cooking musts in this household.  So this recipe is simple!!

We make them & keep them in a sealed container in the fridge for a perfect mid morning or afternoon snack. They last at least a week (but usually eaten within a few days!).

The one of everything recipe.  Well almost!

Simple Breakfast Pancakes

Ingredients

  • 1 cup of SR Flour
  • 1 tsp caster sugar
  • 1 crushed weetbix
  • 1 cup of milk (whichever type you prefer)
  • 1 egg
  • 1/2 cup whole rolled oats (ok not one of everything - we fibbed...)

Method

  1. Mix the dry ingredients. 
  2. Make a well in the middle of the dry ingredients & crack in your egg.  Mix the yolk through the white a little, then add your milk and combine everything until all the flour is dissolved through.
  3. Let it sit for 10 minutes (or longer) so the weetbix can absorb the milk.
  4. Heat a small amount of butter/margarine or oil (which ever is most handy) in a non stick pan.  
  5. Place 1 tsp of the mix for each kiddie size pancake or 2 tsp for adult size. Wait until bubbles show on the surface and then flip. 
  6. Continue until steps 4 & 5 until the mix is all used.
  7. Serve on their own or with a sprinkle of icing sugar or melted honey.
Serve sizes: 2 kiddies ones for kids or 2 adult size for adults.
Recipe makes 26 small or 13 large pancakes.
