Pear, Pumpkin & Walnut Salad
We decided to share a favourite recipe from our "Feeding Growing Humans Beautiful Yummy Food - Fruit" book.
We love a good toasted nut! Adds the crunch, protein & natural oils all salads should possess. The sweetness of the pear, pepper of the rocket & just yumminess of the roasted & caramelised onion/pumpkin give it the healthy heartiness & some extra fibre. Crumbed feta for some salty smooth calcium zing. The flavours just work, without all the fuss of a fancy dressing.
An amazing, easy, healthy, balanced salad everyone will love. Even the kids.
You can use any type of pear you have handy! I used green in the recipe photo shoot, but we have brown pears in the recipe.
Ingredients/Tools
- 2 brown pears, sliced.
- 4 large handful washed/dried rocket.
- 1/2 cup toasted walnuts.
- 1/2 medium washed butternut pumpkin, sliced with skin on.
- 1 red onion, sliced.
- 100g feta, crumbed.
- 1 tablespoon balsamic vinegar.
- 2 tablespoons extra virgin olive oil.
- Oven tray.
- Salad bowl.
- Oven with grill.
Method
- Grill onion & pumpkin with 1 tablespoon oil until cooked. Cool.
- Toss rocket, nuts & cooled pumpkin/onion. Place pears & cheese on top.
- Drizzle oil & vinegar. Lightly toss & serve!
Serves up to 8 as a side.
Add some chickpeas to create a more balanced vegetarian main meal.
