Mini Salmon Patties
High fibre, calcium & omega-3 rich, these simple patties can be cooked ahead for lunchboxes or snacks. Fish is always hard to get enough of in our kids diets (& ours!), so try these easy tasty patties to tick a few of those helpful nutrition boxes.
They take 10 minutes to throw together & another 5-10 to cook. Makes 14.
Ingredients/Tools
- 150g tinned pink salmon, drained.
- 1/2 carrot OR zucchini grated.
- 30g tasty cheese, grated.
- 1 slice toasted, high fibre/grainy bread.
- 1 spring onion, tip sliced off & whole thing roughly chopped.
- 1 egg.
- 25g SR flour (1 heaped dessert spoon).
- 2 weetbix, crumbled.
- 1 tablespoon canola oil.
- Blender.
- Large non stick pan/spatula.
- Bowl for mixing.
Method
- Combine salmon, carrot, cheese & egg. Mix together.
- Add bread to blender & crumb. Add in onion, blend well.
- Add bread/onion to the salmon mix, along with 1/2 weetbix & flour. Combine mix well.
- Take 1 dessert spoon of mix, roll into a ball, slightly flatten then coat in remaining crumbed weetbix. Continue until all mix is rolled/coated.
- Heat non stick pan, add in oil & ensure pan is coated.
- Place in as many of the patties as you can & further flatten with spatula. Let them crisp up for 3-5 minutes, then turn for another 3-5 minutes. Remove from pan!
3-4 would be a good sandwich alternative.
