Oat Apple Slice

Lunchboxes are getting boring again, so we thought we would create something new.
I wanted more fibre in child 3's day - and knew telling her to eat her apple was not going to work! So alas, a recipe packed with fibre and all the stuff kids love - mainly the illusion that its like cake!
You can swap out milks, weetbix and flours for dairy and gluten free.
Tools
- Slice tray 30cm x 40cm or there abouts. Greased with butter
- Bowl/spoon/knife for cutting apples
- Blender for dry ingredients
- Butter needs to be melted - so microwave or stove for this
Ingredients
- 3 cups whole oats
- 3/4 cup crushed weetbix (we used all the crumbs in the packet)
- 1/4 cup wholemeal flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon of vanilla essence
- 1/2 cup greek plain yoghurt.
- 3 tablespoons raw honey
- 100g melted butter
- 2 eggs
- 1 cup milk
- 2 apples sliced (skin on)
- 1 teaspoon brown sugar

Heat oven 180c

Blend oats, weetbix and all dry ingredients in the blender until the oats are tiny, like flour if possible.

Put into a bowl, create a centre, crack in 2 eggs and whisk in the middle of the dry ingredients. Add the yoghurt and milk to this egg mix.

Melt butter and honey in the microwave - then add to the egg/milk mix in the middle of the dry ingredients, along with the vanilla essence; pull in and mix all the ingredients together.

If the mix is too wet, add more flour. If too dry, add more milk.

Add the brown sugar and apple to a shallow bowl and mix with a spoon to cover the slices.

Pour the mix into your greased pan. Top with sliced apple and bake for 40 minutes.

Leave in pan for 10 minutes before slicing and removing. Can be stored in the fridge for a week.
