High Fibre Lunchbox "CC" Choc Cocoa Bliss Balls

Snacks that have actual nutritional value are not easy to come by and certainly not in packets at the supermarket! Even the "health food section" can be questionable. We don't have many "treats" in our regular week, but I like to make one nicer thing for lunchboxes. I had some items to use up in the pantry - so this is what we came up with.
2 balls offer 4g of both fibre and protein and 200 calories - so a perfect snack for active healthy kids.
TIP: Turns out shredded coconut is much tastier when its toasted
WARNING: This recipe contains raw honey = so not for babies under 1.
Choc Cocoa "CC" Bliss Balls
Prep time: 10 minutes Cook Time: None Serve Size: 2 balls per snack (28 balls per recipe)
Tools
- Bowl
- Spoon
- Blender
- Scales
- Container to store in the fridge (glass jar/glass container with a lid)
Ingredients
- 100g weetbix
- 150g prunes
- 150g almonds
- 50g cocoa powder
- 35g toasted shredded coconut
- 100g coconut oil
- 70g RAW local honey
OPTIONAL: Additional toasted coconut to toss through after the balls have been rolled
Method
- TIP: I weight and reset scales to measure each item: adding single items to the bowl and put into blender as I go.
- Add all to a blender, mix until wet enough to roll into balls.
- Roll into 28 balls - around a walnut in size and add to a glass jar or container with a lid. Add in some additional and optional toasted coconut, put on lid and toss around to cover the balls while they are still wet.
- Refrigerate until all eaten! They will last in the fridge for months.
