Trying to get variety + nutrition in, is not easy, even for the experts.  Our simple, nut + gluten free focused options only use common ingredients you have in your pantry.  These literally take minutes. You will love them + so will your kids.

We originally got these from our gorgeous resource Kidspot Kitchen, full of great parent friendly recipes. We have just added some extra's that are completely optional but add in a boost of nutrition.

Tools/Time

10 minutes, blender, spoon, plate.

Ingredients

  • 2 cups desiccated coconut
  • 2 cups dried dates
  • 1 tablespoon black chia seeds (optional)
  • 1 tablespoon of cocoa (optional)
  • 2 tablespoons of coconut

Method

  1. Put 2 cups of coconut, 2 cups of dates + chia seeds (optional) into a blender on high.
  2. Mix until you see the fat from the coconut start to show; 5-7 minutes.
  3. Take teaspoons of the mix, + create firm balls the size of a walnut.
  4. Roll each ball in the mix of cocoa + remaining coconut.
  5. Keep in fridge for use.
  6. These will last for weeks on end, but typically are eaten well before!
